ADD: 12 cups water 2lbs seafood or 3 chicken breasts chopped and browned. 2 cups coconut milk (400ml)
1/4 cup lime juice
Note: If you want extra vegetables, add chopped bok choy & sliced fresh mushrooms.
Seafood can be any of shrimp, squid, mussels, prawns, haddock, cod, scallops or crab.
TO MAKE: In crock pot or lge pot, bring water to a boil; add Thai Seafood or Chicken Soup Mix. Simmer for 45 min. Add seafood or chicken and rice noodles and extra veg (optl). Simmer for 10min. Add coconut milk and simmer 5 min more. If using a crock pot, allow more time for cooking. Can serve with lime wedges and a bowl of rice. Can also top with cilantro. Spicy and yummy! Serves 10
